Some things never change

When things are changing rapidly, some things don’t have to.  It’s nice to hold onto some semblance of consistency.  And sometimes this may mean good, easy meals!  Jalapeño poppers and Chicken Wings have been one of our go-to meals on Friday date night

After a long week at the boat, it’s nice to come home, put on some music, sit at our kitchen bar and chill out with a tea or beer while making this delicious – even keto-approved meal! 

Jalapeño Poppers

PRINT RECIPE
What you need:
  • ~10 jalapeños 
  • 1-8 oz cream cheese block
  • 1-7 oz package of shredded parmesan cheese
  • 1 package of bacon (thinner is better)

Steps:
  1. Preheat oven to 350°
  2. Remove the ends, cut jalapeños in half and remove the seeds.
  3. In a small bowl, mix ½ – ¾ of the block of cream cheese with equal parts of the shredded cheese (so there’s half cream cheese and half shredded cheese)
  4. Spread the cheese mixture on the jalapeños 
  5. Cut bacon in half and wrap bacon around the jalapeños 
  6. Place parchment paper on a pan and line the poppers on it
  7. Cook in the oven for 15 – 20 minutes, until the bacon is done.
  8. Remove and eat as an appetizer but save room!

We always have enough to save for leftovers. Reheating it in the oven is best so the bacon isn’t soggy for seconds.

Estimated Time:

30 – 45 minutes.

Chicken Wings

PRINT RECIPE
What you need:
  • package(s) of chicken wings (estimate 3 – 5 wings per person)
  • sauce – our favorites are medium buffalo, parmesan garlic and honey barbecue 
  • ranch or blue cheese dressing

Steps:
  1. Cut chicken wings into 3 parts – drumette, wingette and tip.  Throw away the tip.
  2. Put parchment on a pan and add chicken to the pan.
  3. Cook for 40 minutes and rotate every 10 minutes, until crispy. 
  4. When poppers finish cooking, you can turn up temperature to 400°
  5. Remove from the oven and evenly divide into bowls based on the sauces you’re using. 
  6. Coat chicken with sauce.
  7. Add chicken back to the pan and add a little more sauce.
  8. Cook for another 10 minutes.
  9. Serve with ranch or blue cheese dressing.
Estimated Time:

50 – 60 minutes, so add this to the oven while poppers are cooking.

Additional Sides

You could always add corn-on-the-cob, salad, or even potato chips to your meal if you want more food.

We have tried cooking chicken drumsticks on the grill but never tried it with the smaller wings.

⚠️ A word of caution ⚠️

Both menu items will be extremely hot after coming out of the oven. Even though it may look and smell delicious, use caution and let it cool before consuming.  Your mouth will thank us!
