Pumpkin Craze
I’d like to preface that I’m not a huge pumpkin spice / flavor lover. When the first hint of fall occurs, I don’t run out to get a pumpkin-flavored latte or pumpkin scented candles. Even at Thanksgiving, I don’t make pumpkin pie – unless it has pecans. That’s why I’m surprised that I LOVE these pumpkin cookies.
Grandma, you’re still the best!
This is a recipe that I got from my grandma. And I can remember sneaking some out from her basement freezer before Thanksgiving. They are so good! I think the pumpkin flavor keeps the cookies moist and fluffy – so they are really hard to mess up.
Last year I made several batches and passed them out to our neighbors, and received compliments from all! As I’ve previously mentioned, I’m not a big cook or baker, but these cookies are so easy and taste delicious too!

Great Pumpkin Cookies

What you need:
- 1 c. butter
- 1 c. white sugar
- 1 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 c. canned pumpkin
- 2 c. flour
- 1 c. old fashioned oats
- 1 tsp. baking soda
- 2 tsp. cinnamon
- ½ tsp. Salt
- 1 c. chocolate chips
- Cookie sheet
Steps:
- Preheat oven to 325°
- Blend butter, sugars, egg and vanilla.
- Stir in pumpkin and blend.
- Combine remaining dry ingredients and stir into pumpkin mix.
- Stir in chocolate chips at the end.
- For each cookie, add a spoonful onto a lightly greased cookie sheet and shape into a pumpkin shape (optional).
- Bake for 25 minutes at 325° – until cookie is lightly firm
Estimated Time:
45 – 60 minutes.
Optional Variations
My grandma has made it with and without chocolate chips, but I find it’s best with. She has swapped in raisins (yuck!) and M&Ms (ok) instead of the morsels.
She’s made it without any mix-ins and whipped together a cream cheese frosting to be spread on top.
CREAM CHEESE FROSTING
- 8 ounces (1 brick) cream cheese, room temperature
- ½ c. butter, room temperature
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Beat the softened cream cheese and butter together with a mixer. Beat in powdered sugar and vanilla until smooth. Frost cooled cookies with cream cheese frosting.
