Warm it up
If you’ve been eating leftover Thanksgiving food for the past 2 days (like us), then you may need another option for all of the extra turkey. I have a solution that is perfect for warming you up on a chilly day – Wild Rice Soup.
I took this family recipe from Kyle’s Grandma, and modified it slightly to add a few more veggies, and cook in a crockpot.
Wild Rice Soup

What you need:
- 2 cups cooked wild rice
- 1 can cream of potato soup
- 2 cups cream (or half and half or milk)
- 2 cups chicken broth
- 2 cups shredded swiss cheese
- Yellow Onion
- Carrots
- Celery
- Mushrooms
- Salt & Pepper
Steps:
- Cook the wild rice according to the package directions: Bring rice and water to a boil, stir, cover and reduce heat. Simmer for 45 minutes or until rice is tender and has absorbed all the liquid.
- While rice is cooking, chop onions, carrots, celery and mushrooms.
- Add vegetables, soup, cream and chicken broth to crock pot and cook on high for 3 hours (or low for 6 hours).
- Add rice when finished cooking in step 1.
- Optional: Add leftover shredded turkey.
- Just before serving, add shredded cheese and stir until cheese melts.
- Add salt & pepper to taste.
Estimated Time:
4 hours if cooking on HIGH, longer when cooking on LOW.
Grandma’s Original Wild Rice Soup Recipe

I can’t remember ever cooking with dried minced onions, but I was surprised at how flavorful and creamy this recipe is. I do prefer the “real” thing in the recipe above, but this was a much quicker alternative.
What you need:
- 1 cup cooked wild rice
- 1 can cream of potato soup
- 1 tablespoon dried minced onion
- 1 cup cream (or half and half or milk)
- 1 cup shredded swiss cheese
- Garnish: crumbled bacon
- Salt & Pepper
Steps:
- Cook the wild rice according to the package directions: Bring rice and water to a boil, stir, cover and reduce heat. Simmer for 45 minutes or until rice is tender and has absorbed all the liquid.
- Boil onions in 1 cup water for 3 minutes.
- Add rice, soup, cream and cheese.
- Simmer, stirring often until cheese melts.
- Optional: Add leftover shredded turkey.
- Add salt & pepper to taste.
- Optional: garnish with crumbled bacon.
Estimated Time:
1 hour.
